I was a chef/caterer/baker for many years as well as an artist. I was a single mother and needed to raise my two daughters, so I cooked during the week, did art festivals on weekends. It was a brutally hard time in my life. I still bake, mostly for myself, but occasionally for others. I have two loaves of yeast bread rising as I write this. I learned from several good bakers and chefs along the way. I worked for two Swiss bakers who owned a bakery in Winter Park at the time. They were often drunk and would go outside and howl at the moon about 2 AM. They were very funny and taught me a lot about baking. I learned to make puff pastry and croissant dough from scratch. The smells there were amazing. I was allowed to take home a loaf of fresh bread whenever I liked and would grab one on the way out. I worked from 11 PM to 7 AM. I would stop at the diner for breakfast on my way home.
